One of the many challenges of returning to college as a full-time mature student has been keeping the family fed. Quick, tasty, healthy meals that I can throw together at the end of a long day. Not much to ask. Ideally, I’d be batch cooking at the weekend, but I have yet to get that organised.
During a visit to the local German discount retailer a couple of weeks ago, something caught my eye – Hot Honey. I didn’t even know that was a thing and now, I’m putting it on everything. It’s amazing on fresh salted popcorn. Delicious on roast potatoes and it has transformed my previously mediocre stir-fry’s.
Here’s one I made last week that was the tastiest thing I’ve eaten in a long time.

Ingredients
(choose your own quantities based on hunger levels or the amount of people you’re cooking for)
Mixed mini peppers
Garlic
Onion
Ginger
Chili
Protien of choice (I’ve made it with chicken and prawns, both were delicious)
Chopped cashew nuts
A dollop of hot honey
Fresh coriander to serve
Your own choice of carb – I use wholegrain Basmati
Method
In a hot frying pan or wok, fry off your protein, remove from pan and put to one side
Fry your peppers and chili for a minute or two, then add your onions, garlic and ginger
Cook on a hot heat until the onions are soft
Add back in your protein
Add the chopped cashews
Add your hot honey and stir it all around until everything is sticky and gooey
Serve with your choice of carb and add fresh coriander.
